NATIONAL VEGETARIAN WEEK

National Vegetarian Week is commencing next week and it’s all about trying out delicious vegetarian recipes. This is a great chance for you to share your meat-free recipes, promote vegetarian products and showcase menus and new products. Our buyer and avid foodie Kelvin has created a new and exciting vegetarian recipe for us all. Remember, vegetarian meals are not just for vegetarians, so ditch the meat and rustle up a vegetarian feast using this recipe!

JACKFRUIT AND HALLOUMI BURGER

1st step - Pulled Jackfruit

Ingredients:

1 medium onion, finely chopped

2 cloves garlic, roughly chopped

1 can of jackfruit (565g drained)               55023

50ml of vegetable stock                            2894

150ml of Alfee’s Chipotle BBQ sauce       61286

Method

  1. Sweat garlic and onion until translucent, add spices and cook for 1 minute
  2. Add the jackfruit, stock and BBQ sauce
  3. Cook over a medium heat for 20 mins
  4. Shred jackfruit with a fork
  5. Check seasoning

 

2nd step - Halloumi block                3425

1/4 Aleppo pepper flakes                   49689

Method

  1. Cut the halloumi block in half then split through the centre giving 4 quarters
  2. Fry the halloumi in oil, sprinkle Aleppo pepper on and leave it to infuse

 

Final step - topping          

Ingredients:

1 red onion (sliced into rings)

1 beefsteak tomato sliced

Rich Sauces mayo                                        31107

Gem lettuce (cut in half and make sure stem is removed)

Brioche buns x2 toasted and spread with mayonnaise     71457

Crispy fried onions           36691

Citrus and balsamic dressing       67961

Method

  1. Season all salad items
  2. Spread out gem lettuce on the bottom of the bun
  3. Top with slices of tomato and onion
  4. Dress with citrus and balsamic dressing
  5. Place seasoned halloumi on top
  6. Place 1/4 of jackfruit on top
  7. Top with 5 slices of avocado
  8. Put fried onions on top
  9. Put the top of the bun on
  10. Skewer
  11. Serve with chips
