Prawn, Fennel and Avocado Crostini

- 50g Country Range Premium North Atlantic Prawns or Country Range North Atlantic Prawns
- 1 Country Range Frozen Small White Fully Baked Baguette
- 15ml Country Range Extra Virgin Olive Oil
- ½ avocado
- ½ fennel
- ½ lemon, juiced
- 6 cherry tomatoes
- ½ red onion
- pinch of salt
- Pre-heat the oven to 220oC.
- Slice the baguette, rub with oil and bake in the oven to crisp.
- Slice the fennel thinly, season with salt and lemon juice.
- Dice the avocado and mix with finely diced red onion and chopped cherry tomatoes.
- Top each slice of baguette with fennel, defrosted prawns and avocado mix.
- Garnish with fronds of fennel herb
