Prawn Risotto

This simple, sophisticated and deliciously creamy prawn risotto will leave diners wanting for more.

Serves 2



  1. Sauté the onions and garlic in the olive oil until soft.
  2. Add the rice and coat with the onion mix until the rice is trans-lucent at the edges.
  3. Add the chicken stock 1 ladle at a time until it is loose and creamy (about 10-12 mins).
  4. Turn off and add the peas, prawns butter and parmesan.
  5. Serve with some nice bread and a crisp salad.
