When Edinburgh's 'The Caley’ opened in 1869, it was one of 40 others in the city.  Although it has been re-joined by modern day brewers, it is the one that has stood the test of time.  

They continue to use natural whole leaf hops and open-fired brewing coppers, which are the last remaining of their kind in the UK.
