A remarkable gin from the bracing waters and shoreline of Scotland. 

Edinburgh Seaside Gin encapsulates the wonder of the shoreline near Edinburgh. This softly sweet, mineralistic London Dry uses botanicals that were foraged on beaches around Edinburgh. Bladderwrack seaweed, scurvygrass and ground ivy make this gin reminiscent of a bracing walk on a Scottish beach.

Launched in 2015, Seaside was the result of a collaboration with the team at the International Centre for Brewing & Distilling at Herriot Watt University in Edinburgh – bringing together the expertise of the Head Distiller while helping nurture a new generation of gin innovators.

The culmination of this project is an extraordinary gin that has a fresh sweetness on the nose, characterised by soft salinity and herbaceous, grassy notes on the palate, followed by a clean finish.

Pair with tonic or shake as a martini... Edinburgh Gin enjoy theirs with a slice of grapefruit or with a sprig of crisp, salty samphire.

FLAVOUR STORY

The three signature botanicals in this gin bring the coast around Edinburgh to life. Bladderwrack seaweed is high in residual sugar and adds a sweetness to the nose and palate, bringing with it the scent of sea air. Scurvy grass carries a slight spice and salinity. Ground ivy adds fresh, summery grass notes to the finish.

PERFECT SERVE

SEASIDE GIN & TONIC:

Ingredients:
• 50ml Edinburgh Seaside Gin
• Premium tonic water
• Ice
• Garnish – fresh thyme and a grapefruit twist (or lemon
twist)

METHOD:
Pour the gin into a glass filled with cubed ice. Top up with
premium tonic water and garnish with fresh thyme and a
grapefruit twist.
